Taco Mexicana is orginally a crispy flaky wrap filled with Mexican Arancini Bean Patty rolled over a creamy Harissa Sauce.
Here we are doing some fusion with potato. This recipe is filled with seasoned mashed potato and tangy creamy sauce.

ALL PURPOSE FLOUR Cup
BOILED POTATO gm
DRIED RED CHILIES Piece
CHOPPED ONION Table Spoon

LIME JUICE TeaSpoon

CHOPPED CILANTRO Table Spoon
TOMATO KETCHUP / SWEET RED CHILLI SAUCE Table Spoon
MAYONNAISE (optional) Table Spoon
Salt TeaSpoon
Oil Cup

☛ Take all purpose flour . Add salt and oil (1/3 of total quantity) with it. Mix everything properly .
☛ Knead the mix using water and make a very smooth dough. Dough should not be hard or very soft. Keep it covered for around 30 minute.
☛ Heat a pan and add 1 teaspoon oil. Add dried red chillies in the pan and fry it . Take it out from the pan and keep aside
☛ Add oil (around 1/3 of total quantity) in the pan . Now add chopped onions and fry those. In the meantime smash the boiled potatoes well.
☛ Once onions become golden brown add smashed potatoes in the pan . Mix it well and cook for sometime . Crush the fried red chillies and add it with the potatoes . Add salt , cumin powder and lemon juice with it . Mix it properly . Cook it until potato binds together .
☛ Take it out from the pan and let it cool .

☛ Now take the dough and make small balls from the dough.
☛ Now roll the dough in round shape using a roller.
☛ Heat an iron tawa / flat pan Roast the rolled dough both side in the tawa / flat pan for 2-3 minute.
☛ Take the potato mix and add chopped coriander leaves . Mix it properly.

☛ To make sauce you can use tomato ketchup / sweet chilli sauce / an equal mix of tomato ketchup and mayonnaise. ☛ Take one tortilla (roasted rolled dough). Apply 1 tsp of sauce and spread it equally all over the tortilla.
☛ Add 2 tablespoon of cheese (I used mix of cheddar and mozzarella. You can use only cheddar also ) on one half of the tortilla. Add 2 table spoon of potato mix on top of the cheese and again add 2 tablespoon of cheese on top of the potato.
☛ Now flip the tortilla and fold it . Similarly make for all of your tortilla
☛ Now fry the tacos (folded tortilla) in a pan and fry both side and buttom also so that it becomes little crispy

Yummy Crispy Taco Mexicana is ready to serve.
