About
Boondi is an Indian dessert made from sweetened, fried chickpea flour. Being very sweet, it can only be stored for a week or so. Due to the need for preserving food in arid regions of Rajasthan, boondi laddu ("Nukti ja laddu" in Tharparkar) are preferred. There is also a savory version, called Khara or Tikha. It is also known as Bundi in Odisha.

To make boondi laddu, fried boondi is dipped in sugar syrup.
Boondi is also considered an important recipe as per the Hindu culture as the sweetened boondi is often distributed in many parts of India specifically on Tuesday in remembrance of Lord Hanuman.

☛ Take Gram flour and make a smooth batter using 75% of total water taken. Make sure there s no lumps
☛ Take Sugar
☛ Add water quantity should be 50% of the sugar
☛ Add Green cardamom and lemon juice
☛ Boil for 5 minutes.
☛ Take the batter and add baking soda.
☛ Mix properly
☛ Take few amount of batter in a separate bowl
☛ mix turmeric powder with one bowl and red food colour in other bowl and Mix well.
☛ Take a mesh skimmer with medium hole.
☛ heat oil in a Pan
☛ Add some abount of batter on the skimmer so that batter drops on the hot oil.
☛ fry for 1 1-2 minute and take it out from oil
☛ Similarly fry all batter
☛ Take the fried Bundi in a big pot
☛ Add warm sugar syrup in it
☛ keep it covered for 10 minute in low flame. Stir once.
☛ turn off the ehat and keep it for 2 hours
Yummy Bonde /bundi is ready to serve.
