Pilaf, pilau, pulao or polao is a rice dish or, in some regions, a wheat dish, whose recipe usually involves cooking in stock or broth, adding spices, and other ingredients such as vegetables or meat, and employing some technique for achieving cooked grains that do not adhere.
At the time of the Abbasid Caliphate, such methods of cooking rice at first spread through a vast territory from India to Spain, and eventually to a wider world. The Spanish paella, and the South Asian pilau or pulao,and biryani, evolved from such dishes.
Pilaf and similar dishes are common to Balkan, Caribbean, South Caucasian, Central Asian, East African, Eastern European, Latin American, Middle Eastern, and South Asian cuisines. ☛ Take Basmati rice and wash it properly
☛ Soak rice in water for 1 hour.
☛ Boil Water (5 Cup water for 1 cup rice) in a pan.
☛ Add Salt , lemon juice , Oil (1 tea spoon for 1 cup rice each of the thee ingrediants) to the boiling water
☛ Add Rice in the boiling water
☛ Boil for 5 Minutes
☛ Whern rice becomes 70% tender take it out and strain the water.
☛ Heat Oil/Ghee in a pan ( Wok Pan is preferable)
☛ Add Cinnamon , Cardamom , cloves and bayleaves
☛ Add Cashew nut and fry for a minute
☛ Add chopped carrots and fry for 2-3 Minutes
☛ Add Green peas , chopped french beans , chopped capsicum and fry for 3-4 minutes
☛ Add raisins and fry for a minute
☛ Add strained rice
☛ Add Black pepper , Salt , Sugar
☛ Mix everything for 5 minutes in medium flame
☛ Cover and cook for 5 minute in low flame
☛ Open the lid and mix for another 2-3 minute
☛ Turn off the heat and serve hot
